Last time we experimented with pitas we used two recipes:
1. This sourdough pita recipe from Breadtopia
and our Ahmed’s Recipe (Ahmed is one of our firemaster volunteers who is originally from Egypt).
2. Ahmed’s Family Pita Recipe:
To make 20 pieces:
– 3 cups whole wheat flour
– 3 cups white flour
– 3 cups warm water
– 1 tablespoon yeast mixed in water with 1 teaspoon sugar
– 2 teaspoon salt
Mix all ingredients and let rise for 1 hour. Split into 75g balls and rest for 30 mins.
